Orange Loaf Cake


A light and moist orange flavoured loaf cake. Simple to make, tasty to eat!


For the cake:

100g margarine
2 eggs
Zest of 1 orange
100g caster sugar
100g icing sugar
130g self raising flour
1tsp baking powder

For the icing:

100g icing sugar
4 tbsp freshly squeezed orange juice

1. Preheat the oven to 180°C.
2. Grease and line a loaf tin.
3. Melt the butter in a saucepan and set it aside to cool.
4. Whisk the eggs, orange zest, caster sugar and icing sugar together in a mixing bowl and then stir in the melted butter.
5. Sift the flour and baking powder into the mixture and gently fold it together.
6. Pour the cake mixture into the prepared tin and place it in the oven for 35-40 minutes or until it is golden in colour. When cooked, place it on a wire rack to cool.
7. To make the icing, sift the icing sugar into a bowl and add the orange juice. Mix until it forms a soft, spreadable consistency. Add a tablespoon of water if the mixture is too thick.
8. When the cake has cooled, spread the icing generously over the top of the cake.


Where it all began…


For as long as I can remember I have had a passion for baking. Growing up, it was a very popular activity in our house. When mam was baking she would take out three small bowls so my brother, my sister and I could all make our own cake. This was sometimes successful, sometimes unsuccessful. I’ll save a particularly “poisonous” story for another day.

At six years old, under the watchful eye of my ever patient mother, the first recipe I mastered was a recipe for chocolate chip cookies. They still remain one of my favourite things to bake for many reasons. Over the years, I have experimented with many chocolate chip cookie recipes but the following, though not the original recipe, is probably my favourite. It takes very little time to make the cookie dough, you don’t have to wait too long for the cookies to come out of the oven and they taste good!

This is a very handy recipe for when you’re friends tell you they’re calling for tea in an hour!


225g margarine
140g caster sugar
1 egg yolk
2 tsp vanilla extract
280g plain flour
150g chocolate chips
pinch of salt


1. Preheat the oven to 180°C.
2. Line a tray with greaseproof paper.
3. Place all the ingredients in a mixing bowl and stir with a wooden spoon until it forms a dough. Alternatively you could use an electric mixer.
4. Roll out the dough on a floured surface, cut out the cookies using a cookie or scone cutter and place them on the baking tray.
5. Place them in the oven for approixmately 15 minutes or until they are golden brown in colour.
